The olive harvest takes place at the end of October till the beginning of January.
In region of Trás-os-Montes e Alto Douro prevails the traditional Rainfed Olive Grove.
The traditional olive harvesting method is “vareja”.
Sticks and rods are used to cause fruit to fall, which are then recoverd on the floor in canvases or panes previously extended.
The olives transport must be carried out in perforated boxes, which allow a good air flow, or in bulk, and the transformation into olive done in the next twenty-four hours after the harvest.
